Aloha Festivals Royal Court Investiture–Kamokila Ancient Hawaiian Village–accessible near the lookout of Opaekaa Falls, Wailua, Kauai. The ceremony will begin at 10 a.m. as the Aloha Festivals king, queen, prince and princess of Kauai travel by canoe down the Wailua River. South Shore Lilikoi Meringue Tartelette

1/2 C lilikoi puree
4 oz sugar
3 oz butter
2 ea whole eggs
Bring to a boil the butter, sugar and passion fruit puree. In bain marie (hot water bath or double boiler), add the eggs and stir until the mixture boils again. Pour the hot filling into the tartelette and set aside to cool.
Sugar Tartelette
3 1/2 oz butter
3 1/2 oz sugar
1 ea whole egg
7 oz all-purpose flour
1/2 tsp. vanilla extract
Make the sugar dough a day before. Beat the butter, the sugar and vanilla.
Add the egg and flour. Do not over mix the dough. Rest in refrigerator for
at least one hour. Roll the dough, cut and form the tartelette. Bake at 330
degrees until light golden color.
Meringue
3 ea egg whites
5 oz sugar
2 T water
Combine the water and sugar into a pan and bring to a boil. Whisk the egg
white firm and pour over the hot syrup. Let it rest for a few minutes to
cool. Pipe the meringue all over the tarte and touch lightly.
Decorate with berries and mango sauce.

Why hasn’t the “infamous” Cocoa Palms Hotel been restored? “Blue Hawaii” with Elvis was filmed there and it has a well known reputation. I understand re-creations of the wedding for folks are still being held.

Coco Palms on Kauai, opened in 1953 and was the world’s most famous Polynesian resort until hurricane Iniki struck the island on September 11, 1992 and damaged Coco Palms. After over a decade, the silly insurance issues are not resolved, so the resort remains officially closed with no announced plans to reopen. If the property owners fail to take some positive action soon, the State of Hawaii is investigating plans to buy the property. However, a private investor is seeking to acquire and re-open the property.
As you mentioned, Coco Palms was indeed the location of the famous outrigger canoe wedding scene in Elvis Presley’s “Blue Hawaii,” released in 1961. Weddings do still take place on the lagoon amid the over 2,000 coconut palm trees.
Brief, informal tours are still conducted by the understanding and old-timer security guard on the property. Groups still make pilgrimages to Coco Palms to have their photos taken in front of the little grass shack where Elvis stood.
Rumors have it that echoes of Elvis can be heard blowing through the palm tree leaves every Blue Moon. The next Blue Moon is July 31, 2004.
