1 lb. diced fish (blue marlin)
1 c. lime juice
1 c. diced Maui onion
1/2 c. green onion, small dice
1/2 c. tomato, skinned, seeded, small dice
1 T. kosher salt
1/2 c. coconut milk

Marinate fish in lime juice and kosher salt for 6 hours. Drain off marinade, add veggies, mix together. Toss with coconut milk and put on plate with taro chips.

Successful Snorkeling
One of the most popular vacation activities among visitors to Hawaii is snorkeling because of the abundant brilliantly colored underwater life. Be sure to choose a safe beach for swimming and snorkeling. Ask locals or lifeguards if you’re not familiar with an area.

Here are some tips to make your snorkeling day especially great:

— Feeding the fish is not recommended since it introduces unnatural behavior to the reef.

— Anti-fog your mask. Spread this anti-fog “goop” thinly on the inside of a dry mask, then do a quick rinse.

— Most damage to coral comes when people grab or stand on it. Even touching the coral lightly can transfer your oils to the polyps, killing them. If your mask starts to leak or you get water in your snorkel, be careful not to stand on the coral to clear them.

— Don’t flail your arms or you will spook the fish — gentle motion is best.

— Wear divers’ fins that slip over reef shoes so that you can walk easily into and out of the water without tearing up your feet. If you wear socks or nylons under the shoes, it’ll keep you from rubbing the tops of your toes raw.

— Use a disposable underwater camera for taking snapshots. Get close to your subject, since the lenses are at a fairly wide angle.

Dear Big Kahuna,

My friend told me it is possible to go snow skiing in Hawaii. That can’t be true, can it?

When people think of snow skiing, Hawaii may not be the first destination that pops into their heads. But, if tropical snow skiing is your bag, then Hawaii is the right place.

People do snowboard and snow ski on Mauna Kea (Hawaiian for white mountain) on the Big Island of Hawaii. There are no ski lifts to take you up the mountain, which is over 13,500 feet high, so you must rent a 4WD vehicle or hire a guide. Skiers take turns being the driver up a road that also serves several observatories at the summit. It usually snows from December to May on Mauna Kea, but February and March are the best bets.

Snow skiing in Hawaii is unlike skiing anywhere else in the world, plus, how many places do you know where you can go snowboarding in the morning and scuba diving in the afternoon? So get with your shredheads and launch some gnarly tweakage.
