Volcano ShrimpSource: Chef Scott Kealoha Lutey, Sheraton Kauai Resort
½ c sesame oil
1 lb. Kauai shrimp
3 T chopped fresh garlic
3 T minced ginger
½ lb. Maui onion julienne
½ c volcano spice
1/4 c chopped cilantro
2 T alae salt/Hawaiian red salt (Kosher salt can be used instead)
2 c Omao greens
Place sesame seed oil in a hot wok. Add Kauai shrimp, garlic, ginger, Maui onion. Cook for 2 minutes or until shrimp turns opaque (DO NOT OVERCOOK).
Season with volcano spice, cilantro and Hawaiian salt. Serve over Omao greens. Serves 4.
