Smoked Basil Pesto SalmonSource: Chef Nalani Kaneakua, Papaya's Cafe
1 lb salmon fillet
8 oz fresh basil
2 cloves garlic
2 oz pine nuts
2 oz olive oil
salt & pepper
Place all ingredients, except salmon, in food processor. Blend till smooth, set aside. Spread pesto on salmon fillet; place in smoker for 1 hour.
To assemble: Toss Caesar dressing with romaine, croutons, and parmesan cheese in a large bowl. Shred or cube salmon and top Caesar salad before serving.
