![]() Kim Chee Shrimp SaladSource: Kenneth Lum, Grand Hyatt Kauai Resort & SpaSERVES 4 8 pc. poached, peeled and deveined shrimp 2 oz. julienne sweet onions 8 oz. shaved Napa cabbage 4 oz. shaved Romaine 1 oz. sliced cucumbers 1 oz. crispy won ton strips 1 oz. julienne carrots 1/2 oz. julienne scallions 6 oz. kim chee vinaigrette (recipe follows) In a large salad bowl, toss all ingredients together. Season to taste. Enjoy!! Kim Chee Vinaigrette YIELDS: 4 CUPS 1/2 c. Kabayaki sauce 1/4 c. kim chee base 1/2 c. ginger 1/4 c. garlic 1/4 oz. cilantro 1/4 c. rice vinegar 1/4 c. brown sugar 1/2 c. sesame oil 1 1/2 c. salad oil Salt and pepper to taste. Blend everything together except the oils. Slowly incorporate the oils and season to taste. |
