Hao Manama Duck Flat Bread

Source: Chefs Martina Hilldorfer & Mark Whitehead, Kapalua Bay Hotel, Maui

Serves 10

2 lb duck leg
Hawaiian salt, cracked black pepper
3 pc star anise
2 pc bay leaf
1 tsp cumin
1 T thyme
2 slices lemongrass
1 clove garlic, cut in ½" cubes
2 C olive oil
1 head napa cabbage
1 bnch each, rockette, pea, sprouts, corn sprouts
1 pc medium red onion
1 bnch each, cilantro and watercress
¼ C each, lime juice and rice vinegar
1 C peanut oil
1 T garlic, minced
4 T miso
¼ C ponzu sauce
1 tsp jalapeno pepper, minced
10 oz pizza dough
10 oz manchego cheese, grated

Marinate duck in salt, pepper, and spices for 24 hours. Place in oil and cook in 350 degree oven until meat falls off bone, 3-4 hours. Remove meat from bone and shred. Reserve.

For vinaigrette: blend lime juice, vinegar, ponzu, oil, garlic, miso, and jalapeno. Mix vegetables for slaw with vinaigrette, marinate 1 hour. To assemble: Portion dough into 10 pieces, roll into 2" rounds, oil and grill on one side. Place duck and cheese on grilled side of pizza and warm over grill. Top with slaw - enjoy!
